Doing a sink fold means to push a point/edge inside the model.
The fold at the beginning of this animation is the waterbomb basic fold. After you have folded this figure do a valley and mountain fold at the upper part of the triangle. Open the paper as far as you need for pushing the center point down and for closing the whole figure again.
